Domaine J. A. Ferret cuvée Clos des Prouges (AOC Pouilly-Fuissé)

The Maconnais white wines are different from those of Chablis in France. In the north of Burgundy, we find marly limestone soils from the Jurassic that will offer a lively, fresh and dry Chardonnay. In the south of Burgundy, the base of granitic and limestone rocks helps mark rounder and fruitier wines. What profile does the Clos de Prouges climat from maison Ferret , in the heart of Pouilly-Fuissé village?

2018: It must be said that the bottle was awakened in 2022. A clear pale yellow Tête de Cru. On the nose the intensity puts notes of white chocolate, cereals and other aromas from the 9 months aging (one third of a barrel of one wine, a third of a new barrel and a third of a barrel of two wines). An ample entry in the palate, with a delicious density on the follow-up. The dried fruits and the creamy side are supported by the notes of the ageing. Always dry, rare for a Maconnais.

The price of more or less 35 euros is fair when we talk about a Chardonnay-based Burgundy-village. A service at 12º C will be a good starting point to appreciate all the nuances. I also find that it produces a perfect pairing when paired with crispy goat cheese that you serve with friends. There is definitely something magical going on there. As it is a dry wine, it will also go perfectly with poultry or a fish dish.
