Domaine de Cantalouze cuvée Le Sécret (AOC Minervois): The secret in Trèbes is to add a little of Cariñena

Aude province is a magical place, one of those places where the spirit can rise and the soul finds rest. There is something about the nature that surrounds the Black Mountain that sparks the imagination and inspiration. It is a perfect destination to travel, to get lost and find yourself tasting his red wines. In this case a red blending perfect for winter times composing of  Syrah 6o% - Grenache 30% - Cariñena 1o% coming from Trèbes.

What we see? A notable opacity granted by the classic solar varieties of Languedoc. The violet tones confirm this young vintage. An aromatic that transports us to the foot of the Black Mountain en route through the paths of low Mediterranean forest, garrigue and Mediterranean herbs. Round entrance in the mouth. Wide, fleshy and beautiful dense development. The freshness of the vintage balances the whole. Spice and ripe fruits fill the mouth until reaching a finish of 14% vol of alcohol that brings the heat of the French south.

Thank you Thomas Sanane for this well-crafted Sécret that highlights all the typical elements of good Minervois. Its price of 15 euros is in line with the rest of its viticole brothers Saint-Chinian, Pic-Saint-Loup or Faugères. The best pairing is grilled AOC Ternasco lamb ribs, with a romesco sauce and some baked potatoes and garlics. Service at 13º C recommended.
